Weekend Picnic

What can be more fun than a picnic? In Central NY, we are covered in the white stuff and it will be awhile before we can begin thinking of picnics! But why not one indoors? Get out the George Foreman Grill and make some burgers or hot dogs...toast a few buns...make your favorite potato salad and you can even find some good frozen corn on the cob to add to the mix. Spread out a blanket on the floor, turn on the game and you are good to go.

This weekend we will be picnic-ing at home. Here is our family's favorite potato salad recipe. I found it in a Penzey's Spice catalog a few years back and it is the most requested by the kids.

Peppery Potato Salad
4 lbs. Russet potatoes
1 medium yellow onion, diced fine, or 1 bunch green onions (cut off both ends, discard, and thinly slice the center portion for best flavor)
5 hard-boiled eggs, peeled and diced

DRESSING:
2 TB. BUTTERMILK RANCH DRESSING or 1 package Ranch dressing
2 TB. water
1 1/2 - 2 Cups low-fat mayonnaise (I use the Canola mayo)
1/2-- 3/4 Cup buttermilk or milk
2 TB. red wine vinegar
3/4 tsp. freshly ground SPECIAL EXTRA BOLD BLACK PEPPER
1 tsp. ALEPPO PEPPER, to top each dish ( I just sprinkle with some paprika)

    Linda Looks awesome! I have heard about Penzey's spice and I think I need to be looking this up! Maybe they have a website?

    Special plans this weekend? We are staying HOME!! :) BTW, one of my favorite students lives in Utica!

    I love adding vinegar to my potato salad too - I just leave out the onions!

    With the temperature rising this reminds me of summer and days to come. I do love a good potato salad anytime of the year!!

    Your peppery potato salad looks delicious and the recipe sounds easy enough for me to make. I think that the buttermilk ranch dressing on potato salad would be delicious. We use our outdoor grill on our patio all year long. The only problem is that the cook can get very cold.

    All of your recipes look & sound so great. I am going to try this potato salad....we eat alot of it here in Texas and I'm constantly looking for something new to try.

    I'm so glad Cassie has a good home. I hope she gives you lots of love. My 2nd oldest cat Sammy was rescued ( by me ) from the city pound truck almost 9 years. I just asked the driver what he had in the box and it was full of kittens. I wanted them all but I had to be reasonable and picked Sammy up. He has slept with me every night since.
